Waffles + Dreams: A New Dessert Shop Opening This Week in Fairfield

The dessert-as-a-meal concept is catching on — just look at all of the options in Montclair alone. New to the scene is Waffles + Dreams, a dessert shop where sweet and savory waffle combinations take center stage. Waffles & Dreams started as a mobile dessert and breakfast bar + trailer and is now opening its first permanent location this month at 653 Route 46 West in Fairfield, New Jersey. The Backstory

With a history in the carnival business, NJ native Lisa Baumann had a calling to get back into the food truck and festival field. She had a corporate job, but a layoff was looming, so she started to think about something she could fall back on. She decided to return to the field she’d always loved while combining it with private events, which is how Waffles + Dreams was born in October 2021. Lisa started out with a cart and added a truck in February 2022 as the business started to grow.

The mobile business travels around to events, from showers and weddings to corporate gatherings and fundraisers, serving sweet and savory creations. It’s best known for its waffle sticks, with crepes being another specialty. It covers north and central New Jersey, Connecticut, and parts of upstate New York. The pop-ups take place out of its trailer or bar setup, and the bar carts typically show up at smaller-scale events that can’t fit a food truck.

“When doing events, we would constantly get asked where our store was,” Lisa told The Montclair Girl. “People wanted to see us at a store after the event. I knew that would eventually be the goal–to be able to serve people in a different capacity and bring that same excitement but to one central location.” Lisa is most excited about the community aspect of a permanent shop. She’ll continue to run both the shop and the mobile business.

 


 

All About The Shop

At Waffles + Dreams, customers can expect quality and consistent desserts and the same fun experience as private events, but with an elevated menu. The shop will serve its typical waffles and crepes, such as banana foster and a stuffed chicken waffle, along with some unique twists on favorite homemade dishes in crepe form. It will serve its bestsellers like the Nutella crepe and waffle stick with unlimited toppings. There are 17 toppings to choose from, including strawberry shortcake, blueberry cobbler, chocolate mint, and crushed Oreos, which is the most popular. The shop will also serve new menu items like a Manicotti crepe and cheesecake burrito crepe. There will also be gluten-free and vegan options.

Waffles + Dreams will have enough table seating for sixteen people, with some bar-top tables for standing and eating. There will also be a couch alongside a greenery wall for cozy seating and an Instagrammable moment.

The grand opening is on Saturday, June 8th at 10AM, with a ribbon cutting on Tuesday, June 11th at 5PM. At the grand opening, patrons can expect free face painting for the first hour and a half, a gift for the first twenty-five customers, music, a photo booth, and giveaways for the first hundred people.

Lisa also plans to host breakfast and brunch events for small business owners to connect and network and monthly vendor pop-ups where local artists can sell their products at the store.

To start, Waffles + Dreams will be open daily from 11AM to 11PM, and eventually will be open for breakfast.
