NYC’s Springbone Kitchen Coming to Millburn

Springbone Kitchen is opening its first-ever location in NJ in the coming weeks – Millburn to be exact. Known for selling bone broth and being a gluten-free restaurant, Springbone has attracted regulars to its two locations in New York City and one in Brooklyn. Now, the owners are ready to take over Essex County. Read on to learn more about Springbone Kitchen coming to New Jersey.

Expanding to NJ

Springbone Kitchen will be located at 321 Millburn Avenue, Millburn, NJ. Founded by Sam Eckstein and Jordan Feldman, Springbone’s newest location was something that had been in the works for a year. In fact, the healthy eats restaurant was close to opening in September, but when Hurricane Ida hit, it completely destroyed the town and the new location. It’s taken months to renovate the space, but now, it’s almost ready to open.

The Ivy at Chatham

Springbone’s original location opened in Greenwich Village in 2016 at 90 West 3rd Street. Then, the longtime friends and co-owners opened the FiDi location at 74 Pearl Street in 2019. Just last year, they opened the Brooklyn location at 277 Bedford Avenue.

When choosing the fourth location, there was no question about planting roots in the Garden State. Although Sam and Jordan were both born in NY, they grew up in Englewood, NJ.

“As we thought about expanding beyond just the city, New Jersey was obviously the first place that we thought of just because it’s where we grew up and we love it,” Sam tells Montclair Girl. “We thought Millburn was a great first town in New Jersey because it really has such a vibrant main street. You can really just park and walk all over the town and there are so many great options. It’s a beautiful town and it’s close enough to the city.”

Springbone’s Kitchen 

At Springbone, customers can expect healthy and delicious dishes. All the wholesome food is 100 percent gluten-free.

“Our brand is all about bringing the same kind of simplicity and focus on quality that everyone has at home and bringing that to a restaurant and being completely transparent,” Sam says. “We only cook with olive oil. There’s no vegetable oil or canola oil. There are no sweeteners in any of our food. Most of our produce is organic. Our beef is grass-fed. Our chicken is free-range. It’s about super high-quality ingredients prepared in a simple, delicious way that you would at home.”

The restaurant’s specialty is its bone broth — beef, chicken, or vegetable — which is made from scratch every day and there is a variety of add-ins for each broth dish. The menu also includes zucchini spaghetti and grain-free meatballs, Grandma’s chicken and rice, the Mexican bowl, grass-fed burgers, and avocado toast among other things.

There are also dessert offerings like grain-free cookies, vegan ice cream, and smoothies. Springbone also serves a selection of hot and cold coffee and tea. 

Coming Soon

Montclair Girl has learned that Springbone Kitchen will be opening in “just a few weeks.” It’s “almost ready” and should be open in January or February. And, it will look similar to the other locations except for there will be “a little bit more space” for seating. 

Upon opening, the eatery will be open all day to serve customers breakfast, lunch, and dinner, and will be available for dine-in, takeout, or delivery. Springbone offers nationwide shipping on the bone broth and hot sauce.

“I’m just really excited to be a part of that and bring something new to a great town that’s already such a great community and actually get to meet our neighbors,” Sam shares. “I’m excited to actually plant roots in Millburn and get to really meet the town and become a fixture of the town. I think there’s just nothing quite like that feeling, so I’m so excited.”

Although Millburn is “a perfect first place,” we’re told it is also going to be a stepping stone for the owners to hopefully open more spots in NJ. “Our hope is that we’ll be a big success and we’re going to expand all over NJ,” Sam adds.
