Upscale Restaurant Blu Livingston Opens 5/1

Essex County’s fine-dining scene is getting a notable new addition. A well-known Hudson County restaurant is expanding across North Jersey and bringing its elevated dining experience to a new audience. Blu, the upscale waterfront destination in Weehawken along the Hudson River, is preparing to open a second location in Livingston on May 1st, 2026. Blu Livingston is near ready to open 277 Eisenhower Parkway in the Shoppes at Livingston, adding another exciting destination to Essex County’s growing culinary landscape. About Blu Livingston

Blu Livingston is led by Blu Hospitality Group owner Michael Giannopoulos, along with the two Directors of Operations, Andrew Christianson and Karl Khambatta. Executive Chef Juan Carlos “JC” Ortega is leading the kitchen, crafting a menu of high-quality seafood and premium steaks that reflect the style of Blu’s Weehawken location. Diners at Blu Weehawken are especially drawn to the impressive seafood towers, which are ideal for sharing with a group and a favorite for capturing eye-catching photos. Among the steak offerings, the BLU Filet Mignon stands out for its signature blue cheese–stuffed preparation, setting it apart from the more traditional cuts. While not the main attraction, the house-made pastas have earned a loyal following, particularly the gnocchi, reinforcing Blu’s commitment to freshness and purposeful cooking throughout the menu.

The beverage program is led by Director Jeremy LeBlanche, who will develop a cocktail menu centered on creativity and visual presentation. The wine selection will be curated by Sommelier Adam Greer.

 

Blu’s arrival marks a meaningful addition to Livingston’s dining scene. With the new location opening, Essex County diners will be able to enjoy Blu’s elevated menu and fine-dining atmosphere without traveling to Weehawken.
